Smeg gas hob turning off?

I have just moved house where there is a 5 ring Smeg gas hob fitted. The gas rings do light, but turn off randomly. I can hear a slight clunk and then there is no gas coming out at all and the rings need to be relit. Has anyone come across this probelm/know how I could try to fix please?

flame failre devices need replacing, the clunk is the gas tap closing off. defo a job for a smeg engineer tho cus most of the hobs are a work of art to get into.
